Because it's well known they always bring the best ( or worst ) in us ( but for this specific occasion we shall assume it's the best! ), and as such I have researched deep inside my endless bucket of inspiration for an appropriate gift. Meatballs Spaghetti( filipino style )
Hello again friends from overseas and welcome to another weird weekend cooking episode of your antisocial friendly, pretended filipino chef. Now that Valentines Day is gone and you certainly spent your whole savings taking your loved ones out to dinner ( because nothing says I love you like somebody else's cooking ), it's time to re-balance your budget with some in-house tasty meal. Or, if you didn't get any love and looked for increasing your social status points with a volunteering job, aside from the feel good about yourself sentiment, you might have also caught a cold, hatched 2 pokemon eggs by walking a lot and got super hungry when back home. Or maybe you were just lazy and slept half day Sunday. Well, in all those cases do not worry, I got you covered with a cheap super sarap tasty, quick and easy to prepare Meatballs Spaghetti Filipino style.
But lets not take any more of your time because talking is for politicians and you are hungry for sure by now.
What makes Spaghetti more filipino you may ask? It's easy: sugar. For anyone that didn't go there yet please do so or ask your friendly filipino neighbor how many treat bags or sweets they have in their cupboard. Because breakfast lunch and dinner is as important as the treats in between meals and merienda. So you should never run low on those ( and sugar).
Anyway, getting back to the sweet spaghetti thing, lets search our cupboard and ( since I'm a canadian eastern european) find all the leftover pasta from our previous weekend blog cooking.
As you guessed by now I'll use random pasta instead of spaghetti ( it will still make you full and fat, no worries). Let it steam nicely in a pot with a bit of salt and olive oil( oil makes the pasta not stick together or to the bottom of the pot in case you forget about them for too long).
While the pasta is taking care of itself scrubbing and boiling nicely in its steam bath, let's focus or attention on the meatballs part and show those swedes how meatballs are really done! But wait, you'll say, meatballs are a very complex and laborious job, that's not for instant cooking! Hahaha, do not worry, I got you covered again! First, go to the store and find a nice pack of canadian sausage made with maple and cranberries ( Yum, it already sounds filipino). Yes yes, I know, german sausages are the best ( as R claims) but for now those other ones will get the job done as well even if it takes longer to get them going (because of the cold temperatures outside).
Alright, so thaw the sausage, cut it into meatball like portions and roll them nicely through flour, leftover parmezan breadcrumbs ( from our last week Embutido) and some egg. Do they look like meatballs now? They sure do! Well let's fry them nicely then and have some minute made canadian meatballs done!
In the meantime we also need to get some sauce done, because that's the most filipino part of the dish. So grab some tomato paste and your handy dandy pack of coconut raw sugar and mix it nicely with some water. The result should be sweet enough to go with the flow and the nongerman cranberry sausage meatballs. Put everything in your frying pan along with your best wishes and some chopped onion.
Of course, you can add some frozen leftover vegetables mix on top because vegetables didn't hurt anyone ever, except that time your partner threw a frozen bag at you because you forgot her Valentines ( or birthday) gift. Now combine everything with the boiled pasta and have the most sarap fast dinner ever (alone)! Yum!
